Ingredients (1 serving):
- Organic black bean protein pasta Maxsport — 70 g
- Extra virgin olive oil — 1 tbsp.
- Garlic — 1 small clove
- Anchovies in oil — 2–3 fillets (≈10 g)
- Canned tomatoes in their own juice (diced) — 150 g
- Black olives (Kalamata), pitted — 30 g
- Capers — 1 tbsp.
- Chilli flakes, parsley — to taste
Method:
1️⃣ Boil the pasta in salted water until al dente (strictly according to the instructions). Reserve a little pasta water.
2️⃣ Heat the olive oil, add the garlic and anchovies. Mash the anchovies with a spoon — they should fully dissolve into the oil.
3️⃣ Add the chilli flakes and tomatoes. Simmer for 6–8 minutes until you get a rich sauce.
4️⃣ Stir in the olives and capers, heat for 1–2 minutes.
5️⃣ Add the pasta and a little pasta water, toss until you get a glossy, coating texture.
6️⃣ Remove from the heat and sprinkle with fresh parsley.
