Protein makes up about 60-70% of the dry weight of spirulina, which is why it is colloquially called green meat. They can also be a good alternative source of peptides for people with intolerances to other high-protein foods. Spirulina is rich in several forms of sulfur, which is felt in the taste, reminiscent of boiled eggs.
