Recipe: perfect cashew cake

Cashew cake without sugar — creamy and delicious
Soft, gentle, and completely without added sugar – this cashew cake is your new favorite. The dessert is made without baking and resembles a real cheesecake, but it’s lighter and healthier.

PREPARATION
- Base: Crush the Chikalab cookies and form a ball. Press the mixture into the bottom of a 16 cm mold and shape the edges with wet hands. Place in the refrigerator to set.
- First layer: Mix the cottage cheese and BLONDIE paste into a smooth mass (use a blender). Pour the mixture onto the base and place it in the freezer for about 10 minutes.
- Second layer: Mix the remaining cottage cheese with BRUNETTA paste until you get a creamy texture. Pour it over the first layer and place the cake in the freezer for 1–2 hours.
- Decoration: Remove the cake from the mold, add nuts, and let it thaw in the refrigerator before serving.
The cashew cake melts quickly, so it’s best served right before eating. Perfect with coffee or matcha.
